Nutrition & Meals

A morning snack, hot lunch, and an afternoon snack are provided by the school.  Each snack will contain foods from at least two food groups as noted in Canada's Food Guide to Healthy Eating.  Snack portions are designed to meet a young child's need for midmorning and midday nourishment, while not interfering with mealtime appetite.  Hot lunches will include at least on selection from the milk and milk products food group, one selection from the meat and meat alternatives food group, one serving from the bread and cereals food group and two selections from the fruits and vegetables food group.  Menus are planned four week cycles and are posted on the parent bulletin board.   Because of severe allergies, peanut and nut products are banned from CTEC.

Bring Your Own Lunch

Once a month, parents are asked to send a nutritious, well-balanced lunch such as a sandwich, fresh fruit, yogurt or cheese sticks, or crackers.  CTEC is a "Nut Free Zone" - please do not send nuts or nut products of any kind.  We also ask that you please do not send any sesame seed products.

Carmen Gentile is CTEC's resident cook, serving mouth watering hot lunches & nutritious snacks for our preschool and kindergarten children.

Chili

1 1b. ground beef
1 cup chopped onions
3/4 cup chopped green pepper

Fry the ground beff and mix in the onion and green peppers.

Stir in:

1  19 oz can tomatoes
1  7 1/2 oz can tomato sauce
2  14 oz cans red kidney beans
1  tsp salt
1  tsp dried parsley flakes
1  bay leaf

Heat through and serve!

Lasagna

Lasagna

In a saucepan, heat throughly:
2 Tbsp vegetable oil

Chop:
1 onion and 1 garlic clove.

Add and cook until it begins to brown:
1/2 pound ground beef

Stir in and cook until onion is transparent and meat is evenly browned:
1/2 tsp pepper
1/2 tsp nutmeg
1/2 tsp salt

Drain off fat.  Blend in:
1 (14 oz) can tomato sauce
1 (5.5 oz) can tomato paste
2 bay leaves for flavour (remove after sauce is done!)
Bring to a boil, reduce heat and simmer until meat is tender.

Cook until well done:
1 package lasagna noodles

In a 10 x 6 x 2" pan, place 1 layer of lasagna noodles; cover with sauce and sprinkle with mozzarella cheese.  Repeat until you use all of the lasagna noodles.  Top layer - cover with remaining sauce and sprinkle with mozzarella cheese.  Bake in a preheated 350 degree oven for 25 minutes.  Makes 4 servings.

Apple Cake

Apple Cake
Prep. time:  20 minutes.  Cooking time:  45 minutes.

5 apples
1 Tbs cinnamon
1 tsp salt
1 1/2 cups sugar
1 cup oil
4 eggs
3 cups flour
2 tsp baking powder

Clean apples and slice them thin.  Add flour, baking powder, suger, salt and cinnamon together.  Beat the eggs, add oil and mix together.  Mix well with the apple mixture.

Spray an 8" x 8" x 2" dish and spread the mixture into the greased dish.  Bake in preheated 350 F oven for 45 minutes.  Enjoy!
